French Toast Omelet by Holly Mosier
What you’ll need:
2 large eggs
2 tbsp low-fat milk
cinnamon
sweetener (like splenda)
powdered sugar
vanilla (optional)
1 piece whole-grain bread
cooking spray
Directions:
Beat 2 large eggs with 2 tablespoons of low-fat milk. Add cinnamon and sweetener to taste (Splenda, sugar, etc). Add a dash of vanilla, if desired. Soak 1 piece of whole-grain bread in the mixture, turning it over until the bread is completely coated. Pour the bread and egg mixture into a small frying pan sprayed with cooking spray, cover, and cook on low heat. Flip it over after about 2 or 3 minutes. It’s done in about 5 minutes.
Serve with extra cinnamon and a dash of powdered sugar. Enjoy!
