What do you bring to a cookout?

We have a cookout every single day this weekend to go to our have at our house for Memorial Day. I’ve been trying to whip up easy side dishes that I can take to each one, but some things need to be made the day of.

So, I thought I’d share what I’m making this weekend and I’d love to hear what you take to a cookout, too!

Cool veggie pizza (recipe below)
Tortellini pasta salad
Hot potato salad
Cheesecake-stuffed strawberries (amazing.) (Also, totally the new cake pop.)
Caprese salad skewers (I also top with balsamic vinegar)

Cool Veggie Pizza
This is a really old Pampered Chef recipe that my mom has made for years and now I make it all the time, even when we don’t have any place to go, because the kids love it so much.

What you’ll need:

  • 2 cans of Pillsbury crescent rolls (normally I’m not brand specific but trust me on this one)
  • 1- 8oz pkg cream cheese, softened
  • 1 pack of Hidden Valley ranch salad dressing & seasoning mix (or any equivalent- once I used a pack of cheesy dip from Tastefully Simple and that was delicious!)
  • dash of milk as needed
  • chopped veggie toppings- my staples are radishes cut like pepperoni, matchstick carrots, and broccoli but you can put anything on this!

Directions:
Flatten crescents out onto cookie sheet to make the crust. Bake as directed for crescents, taking out when slightly golden.

Let cool and mix salad dressing mix with softened cream cheese. Add milk if it’s too thick but you’ll want it “spreadable” and not runny.

Top with veggies! Refrigerate for about an hour and then slice and serve!
