A couple weeks ago I attended a brunch where the most delicious asparagus pastry “pizza” was served. I craved it every day until I finally asked my friend the recipe already! It’s so very easy to make.
I also have big plans to use other veggies instead of asparagus, like fresh spinach, tomatoes and whatever else I might find at the farmer’s market.
What you’ll need:
- 1 pastry sheet* (I used phyllo dough, thawed on parchment paper on baking sheet counter for 1 hour)
- 1/2 bunch of asparagus (the skinnier the better)
- 1/2 Cup Gruyere cheese, shredded
- 1/4 Cup Parmesan cheese, shredded
- 1 Tablespoon olive oil
- salt & pepper
Directions:
Preheat oven to 400 degrees. Trim bottoms of asparagus and slice in half length-wise if they are fat. Roll out pastry dough and press in seams.
Sprinkle half the Gruyere & Parmesan (I add a bit more than the recipe calls for because I LOVE CHEEEEEESE!) on dough, then line asparagus on top. Add rest of the cheese and drizzle with olive oil. Bake for 20 minutes or until golden and asparagus is looks nice and roasted.
Add a dash of salt & pepper (and I added crushed red pepper) on top before cutting into small squares, enjoy!
*Often frozen pastry sheets come in boxes of two, so this recipe is great for doubling- especially since one bunch of asparagus should be plenty for two batches.
I could so see this recipe being turned into an adventure by allowing the kids to choose one item each to toss on to the pizza.

YUM!!!!!!!!!!!!! This sounds AMAZING! And I LOVE your idea of using other veggies, because as much as I love asparagus, I would be the only one in the fam that would eat it….but spinach and tomatoes I could pull off!

I seriously need to search for phyllo dough in my grocery store; I’ve never found it. I’ve made pizza dough and done the store-bought crusts before. I love asparagus – my daughter calls it “ska-bare-a-gus”.
That looks so yummy – but I have never bought phyllo dough (it scares me!). My mom bakes with it, though, so I think I will pass this recipe on to her, then maybe she will make it for me? Or we could make it together
