What’s for Dinner: Ground turkey stir fry

Every Monday here at Real Moms Guide, I will be featuring budget-friendly, (mostly) healthy, family recipes and cooking tips in our feature called “What’s for Dinner.” Today, let’s talk about stir fry.

My husband and I have two 2-year-old daughters and a 3-year-old son, and as you can imagine, they can be picky eaters at times. When you factor in that my husband and I are almost vegan (except on Fridays when we eat fish), then meal planning can be difficult.

For the kids, ground turkey is one of our staples. It’s healthier than ground beef, and the kids love it. We use ground turkey for everything from burgers to spaghetti sauce. One of our kids’ favorite dishes is ground turkey stir fry. The best part is that we can stir fry the veggies, then take out a portion for my husband and I before adding in the meat for the kids. Try to use a mix of colorful vegetables to make it more appealing to kids.

Ground turkey stir fry

Serves 4-6

Ingredients:

  • 1 pound ground turkey
  • 2 large zucchini, sliced
  • 1 red bell pepper, sliced in strips
  • 1 yellow red pepper, sliced in strips
  • 1 cup chopped broccoli
  • 1/4 cup chopped red onion
  • mushrooms, baby corn, pea pods and other veggies (optional)
  • black pepper
  • soy sauce

Directions:

  1. In a large skillet, cook ground turkey over medium heat until brown and cooked through.
  2. Add oil or cooking spray to wok (or other skillet), add vegetables and cook over high heat until cooked but not soggy.
  3. Remove portion of veggies for those who want vegetarian dish.
  4. Add ground turkey to vegetables in the wok and stir in black pepper and soy sauce to taste, if desired.
  5. Serve with rice or on its own.
